The Essential 2-Pot Dinners

After a busy day, spending the evening washing and chopping vegetables, dealing with raw meat, and cleaning dishes is unappealing. Instead of turning to frozen dinners or eating out, I'd like to introduce the essential 2 pot meals. We want to show you two simple, 2 pot recipes that make quick & delicious meals that are easy to clean up. Lower the barrier to making good decisions after working hard all day with these tasty recipes. These are easy to make in bulk and make fantastic leftovers for lunches. Feel free to mix and match ingredients to customize these recipes!

West Coast Vegetable Fried Rice

Ingredients:

  • 4 cups brown rice

  • 1 onion, chopped

  • 1 red bell pepper, diced

  • 1 serrano chili, diced

  • 1 clove garlic, diced

  • 1 cup broccoli, chopped

  • 3 eggs

  • Soy sauce, to taste

  • Sweet chili sauce, to taste

  • Extra Virgin Olive Oil, for cooking

 

Instructions:

  1. Make brown rice according to package in a separate pot or rice cooker with a ratio of 1.25 cups water to 1 cup rice.
  2. As rice is cooking, heat up a splash of EVOO in a large pot.
  3. Once the oil is hot, add all veggies to the pot and stir often to prevent burning at the bottom.
  4. Crack eggs into the veggie pot, stirring constantly until fully cooked.
  5. Once rice is fully cooked, add a splash more oil to the large veggie pot.
  6. Mix rice with the veggies in the large pot.
  7. Mix in soy sauce and sweet chili sauce to taste.
  8. Allow to cool and enjoy!

 

 

Chicken Pesto Pasta

Ingredients

  • 1 package whole wheat pasta

  • 2 chicken breasts, cut into small pieces

  • 1/2 onion, chopped

  • 1 cup cherry tomatoes, halved

  • 2 green bell peppers, diced

  • 1 clove garlic, diced

  • 1 cup mushrooms, chopped

  • 1/3 cup pesto sauce

  • 1/4 cup parmesan cheese

  • Extra Virgin Olive Oil, for cooking

 

Instructions:

  1. Heat up a splash of EVOO in a large pot.
  2. Heat a separate pot of water to boil pasta.
  3. Once the oil is hot, add chicken and stir often to prevent burning at the bottom.
  4. Once chicken is almost fully cooked, add vegetables and mix often to prevent burning.
  5. Start cooking pasta in the boiling pot (should take 8-10 minutes).
  6. Once pasta and chicken/veggies are cooked, mix pasta with chicken/veggie mixture in the larger pot.
  7. Add 1/3 cup pesto and 1/4 cup parmesan cheese to the mixture.
  8. Allow to cool and enjoy!
